Baked Protein Oatmeal

Protein Oatmeal
2.5c oats
1c protein
1/2c brown sugar
1.5 tsp baking powder
3/4 tsp salt
1.5 tsp cinnamon
1/2 c chopped walnuts
1/4c mini chocolate chips
1c blueberries
1/2c strawberries
mix those together while your oven is preheating to 375 degrees. Pour into a 3Q baking dish.

Top with:
bananas sliced
sliced strawberries
sprinkle choc chips and walnuts

Mix 3c milk, 4.5T melted butter, 1 whole egg, 1 egg white, 1.5t vanilla
Pour over the oatmeal evenly.
Bake for 35-45 minutes. (you’re looking for it to be golden brown on top and the milk will be set into the oatmeal)

I accidentally overcooked mine slightly. So it was kinda dry, but it was still insanely delicious. I drizzled maple syrup over it one day… another day I put freshly mashed strawberries and blueberries on it… today I put peanut butter on it while it was hot… you could pour a bit of cream over it. It’s delicious though. I ate mine with 2 eggs a couple times just to bump up the protein content a hair… equally good with a side of bacon 😉
It’s a malleable recipe. You don’t like blueberries? Omit them! You LOVE walnuts? Add more! Have fun with it.
